The researchers say the technology can be used to change the characteristics of milk components, like proteins. They add that the research will eventually lead to dairy products with health benefits. Some areas expected to benefit from the technology include specialized children’s diets and people dealing with diabetes, obesity, heart disease or cancer, to name a few. You can probably expect to see these dairy products on the market in about three years.
