Holidays boost dairy consumption

The holidays bring a boost to dairy demand at a time when many farmers are struggling financially because of high feed costs.

To keep up with the increase in sales of butter, eggnog and other dairy products during the holiday season, dairy processors say they begin building up their inventory as early as September.

Shoppers may see higher prices for butter this year, according to processors, who say butter consumption has increased consistently in recent years.
