Cabot Creamery Cooperative is once again going to produce an organic line of cheddar cheeses. The new cheeses will hit store shelves this fall.

Cabot, whose parent company is Agri-Mark, previously started producing organic cheddar cheese in 2000. The product was on the market for about four years.

But demand for organic products has vastly improved since then and Cabot officials believe now is the time to relaunch its organic cheddar.
