If all goes as planned, Blue Ribbon Cheese Company plans to be making cheese in its new California plant by early 2009. The owners of Blue Ribbon cheese are currently working with county and state officials to get all of their permits. They hope to begin construction early in 2007 and to begin cheese production in early 2009.

The $225 million state-of-the-art cheese plant will be located in the San JoaquinValley within 60 miles of Fresno, Calif. The facility will use 6.8 million pounds of milk per day to produce mozzarella and cheddar cheese.
