Chefs in the WashingtonD.C. area say they are using more cheese in menu items as well as selling more cheese courses. In fact, an article in The Washington Times cites one restaurant where about 20 percent of diners order cheese instead of dessert.

Other good news about cheese consumption includes USDA projections that U.S. cheese consumption will hit 34 pounds per person per year by 2014.
