Demand may be picking up

Scaled-back cheese production during April and decreased milk production during May have slowed the growth of American cheese stocks. According to the USDA's "Cold Storage" report, released last Friday, commercial stocks of American cheese decreased about 1.4 million pounds during May versus the same time a year ago.

This is the first time in more than a year that commercial stocks of American cheese have decreased — an indication that demand may be starting to catch up with supply.
