A Wisconsin custom-packaging company plans to market several varieties of cheese with 90 percent less cholesterol.

All eight varieties that Alliance Enterprises of S.E. Wisconsin LLC plans to market will be made using technology pioneered by Kraft Foods. The technology removes up to 90 percent of the cholesterol from dairy products, without affecting taste or texture. Five of the cheese varieties that the company plans to market will target the Hispanic population.
