Milkers' wages rose slightly over the past six years — from $9.26 in 2000 to $9.69 in 2006, according to a University of California survey. Farms in the western U.S. paid the most.

Even more telling is the large increase in foreign-born milkers over the past six years — from 20 percent to 63 percent among 44 Midwest farms surveyed and an increase from 3 percent to 43 percent among 51 Northeast dairies.
