Southwest Cheese plant opens in New Mexico

The new Southwest Cheese plant received 65,000 pounds of milk this week, according to the Clovis News Journal.

The plant will be operating only at 30 percent of capacity and won't begin selling product until later this month.

when fully operational, the plant expects to receive seven million pounds of milk and produce 640 pounds of cheese blocks.
