Non-homogenized milk is garnering quite a bit of attention these days.

According to a report in New West, there’s a quite trend toward cream-top, or non-homogenized milk, especially in Western Montana. A couple of local dairies are providing the product to some Montana store shelves, while the milk is also available at national chains like Whole Foods.

Consumers who try it, really seem to like it.

In addition, advocates assert that non-homogenized milk is more easily digested by those who are lactose intolerant, although science has yet to support that claim.
