It appears cheese consumption in the U.S. has surged. It’s estimated Americans are now eating 42 lbs. per capita of cheese annually – more than double since the government started keeping track back in 1975.

Bloomberg reports that dairy cooperatives are investing billions in cheese production, anticipating continued demand. It says companies such as Great Lakes Cheese and Sargento Foods are expanding their capacity while low-carb diets and pandemic induced home cooking have boosted cheese’s popularity.

However, industry experts warn of potential oversupply as diets tend to shift. The industry remains hopeful other dairy products will help balance any excess.
