“Cave-Aged” Blue Cheese Breaks World Record for Most Expensive Cheese

The world record for the most expensive cheese has officially been broken. The cabrales blue cheese of northern Spain earned the title of the world’s most expensive cheese after a 2.2kg wheel was sold at auction for €30,000, or $32,374. This equates to roughly $6,675 per lb.

The record-breaking cheese consists of cow, sheep and goat milk and was left to mature for a minimum of eight months at 44°F in a cave at an altitude of 1,400 meters, or roughly 4,600 feet. These caves are located near the Cabrales area in the Picos de Europa national park. Once the cheese is mature enough, it is then transported down the mountain by foot.

The cheese was made by Guillermo Pendàs in his family’s Los Puertos factory in Spain and purchased by restaurant owner Ivàn Suárez. Suárez held the previous record for purchasing the world’s most expensive cheese in 2019 at €20,500, or $22,392.
