Not many modern dairy operations hold a land deed signed by Abraham Lincoln, and even fewer use that same soil to run climate-controlled, data-driven facilities tracking cow biometrics in real time. But for Amber Horn-Leiterman, a sixth-generation dairy farmer and managing partner of Hornstead Dairy in western Wisconsin, bridging the gap between 1860s pioneer grit and 2020s agricultural technology is just part of the job. Taking the stage at the 2026 High Grounds Dairy Conference, Horn-Leiterman provided a compelling boots-on-the-ground look at how a historic Wisconsin family farm evolved into a highly optimized, 4,000-animal powerhouse.
Horn-Leiterman’s roots in agriculture run deeper than most. In 1863, amid the turbulence of the Civil War, her German immigrant ancestors answered Abraham Lincoln’s call under the Homestead Act, settling in the fertile, albeit unpredictable, climate of Wisconsin.
“We actually have the abstract signed by Abraham Lincoln on our farm,” Horn-Leiterman shared, grounding her presentation in a legacy of resilience. Today, Hornstead Dairy is a testament to that enduring pioneer spirit, functioning as a massive, meticulously coordinated partnership between Amber, her younger brother Tom and their parents, Brian and Lori Horn.
But while the land holds over 160 years of history, the operations at Hornstead Dairy are decidedly forward-looking.
Scale and Self-Sufficiency
Situated roughly three hours north of Chicago, Hornstead Dairy is an operation of impressive scale and self-sufficiency. The farm employs a dedicated team of about 30 full-time and part-time workers who help manage a sprawling enterprise. The dairy boasts 2,400 milking and dry cows, alongside an additional 1,600 young stock.
“Everything born on our farm stays on our farm,” Horn-Leiterman noted, emphasizing a closed-loop approach that provides a unique advantage in biosecurity and inventory management. To feed this massive herd, the family runs approximately 2,800 acres of owned and rented land, plus another 1,500 acres from which they purchase feed directly off the field. Every ounce of crop harvested goes directly to self-consumption for the herd — nothing is sold on the open feed market.
Shipping roughly 180,000 pounds of milk a day — running at 4.6% to 4.7% butterfat and 3.5% protein — efficiency and animal comfort are paramount. And at Hornstead Dairy, comfort means battling the extremes of Wisconsin weather.
Engineering the Perfect Climate
“If you’re from the upper Midwest, we get all the fun stuff like snow, and lots of snow,” Horn-Leiterman joked, referencing lingering PTSD from a brutal March blizzard. But inside the sprawling barns at Hornstead, the cows remain entirely oblivious to the chaos outside.
In 2017, the dairy completed a massive expansion that included state-of-the-art tunnel-ventilated barns, some stretching up to 650 feet long. Horn-Leiterman described a massive bank of 164 exhaust fans at the back of the barn, constantly pulling air across the herd to create a steady 7-10-mile-per-hour breeze.
This meticulously engineered environment serves multiple purposes. First, the breeze keeps the barn entirely free of flies and insects, which simply cannot fly against the velocity of the wind. Second, it guarantees an optimal temperature year-round. When it is a sweltering 100 degrees with 95% humidity outside, the barn never exceeds 75 degrees. Conversely, when the bitter Wisconsin winter drops temperatures to minus 30 degrees, the insulated, double-steel-layered barns never dip below 35 degrees. Combined with deep-bedded stalls utilizing virgin Wisconsin sand — requiring roughly 20 dump truck loads a month — the focus remains squarely on cow comfort.
Milking Technology and Resource Stewardship
The 2017 expansion also brought a double-25 parallel parlor to the farm, allowing the herd to be milked three times a day. While land constraints prevented a rotary setup, the current parlor runs with peak efficiency, utilizing mechanical teat scrubbers for prep and automated post-dipping within the liners. The family is also looking to the future, actively anticipating the installation of GEA’s DairyProQ mechanized units to further streamline the milking process.
Resource management is another critical pillar of the Hornstead philosophy, particularly concerning water.
Well water is first used in a plate cooler to rapidly drop the temperature of the milk from body heat to 45 degrees. From there, that same water is captured in a 25-foot storage silo, where it is repurposed for drinking water for the cows, hot water baths for colostrum, barn wash-downs and cooling sprinklers.
Similarly, the farm’s 24 million gallons of combined manure storage capacity ensures that nothing goes to waste. The natural fertilizer is aggressively recycled onto their crop fields, ensuring the soil remains rich and productive for the next harvest.
Data-Driven Dairy Management
To manage such a massive and intricate system, Horn-Leiterman and her family rely heavily on technology. She highlighted three distinct platforms that have revolutionized their day-to-day operations:
- John Deere Operations Center: Used to track every detail of fieldwork, from yield data to manure application, acting as a complete database for their land.
- Topcon Feed Management: An essential tool for managing feed inventories, allowing the team to make real-time, data-backed decisions on daily rations and nutritional adjustments.
- SmaXtec Health Monitoring: A bolus system administered to the cows that monitors internal temperature, rumination, water intake, and activity. “You can kind of make some game-time decisions and be more of a proactive farmer versus a reactive farmer,” Horn-Leiterman explained. “I think that’s kind of a game changer when we talk about management philosophies.”
Looking to the Seventh Generation
At the heart of the operation, beneath the data points, the automated scrubbers, and the climate-controlled barns, Hornstead Dairy remains a family endeavor. Horn-Leiterman proudly shared a photo of her four sons — the potential seventh generation of the farm.
Her husband, an electrician who owns his own business, often serves as the farm’s on-call technician.
“8 p.m. service calls are much cheaper when you’re married to an electrician,” she laughed.
Ultimately, every technological advancement, every structural expansion and every careful management decision points toward a single goal: preserving the legacy started in 1863.
“We’re hopefully utilizing our resources and really doing a bang-up job to provide a farm future for them as well,” Horn-Leiterman concluded, looking toward her children.
As the dairy industry navigates shifting markets and environmental pressures, operations like Hornstead Dairy prove that the key to the future lies in honoring the hard work of the past while boldly embracing the technology of tomorrow.
